10 Ways How To Make Vegetables Go From Boring To Bold - Meatless Monday

Meatless Monday is an international movement to encourages people to give up meat on Mondays to help the environment, animals and their welfare, and an individual’s own health.

But- what to eat on Meatless Mondays? A can of soup? Smoothies? Salad?

Steam broccoli and call it a meal?

Vegetables can be vibrant and bursting in flavour- it all depends on how you cook them.

If you think vegetables are bland and boring- THINK AGAIN!

 

Here are 10 ways you can make vegetables rock your taste buds!

  1. Use aromatics! Add spices! Season, season, season!

  2. Create toppings such as roasted garlic with a sprinkle of red pepper flakes or chili powder.

  3. Use roasted nuts for a bit of protein such as sesame seeds, almonds/shaved almonds, cashews

  4. Make a pesto! Pestos taste great on pretty much everything, and it takes around 5 minutes to make!

  5. Make your own sauces! Roast tomatoes in salt, pepper and oil- then blend with some basil/italian seasoning (I always add some balsamic vinegar or wine for flavour) and ta-da you have a marinara sauce

  6. Add fresh herbs- not everyone likes cilantro (it’s a love or hate herb), but you can also use rosemary, thyme, green onions, or my favourite- basil!

  7. Roast your vegetables in spices. For example; cauliflower roasted in chipotle and chili spices, salt and pepper, with a bit of oil roasted in the oven tastes great as a side dish or in tacos.

  8. Find vegetarian substitutes and discover their flavours. For example- use maple syrup instead of honey- it adds more flavour or lentils instead of ground beef.

  9. Grill or air fry your vegetables to really give them a good crunch

  10. Make your own dips- hummus or even a zesty yoghurt dill sauce
